A Volcanic History & Blue Waters:
Coffee arrived in Guatemala in the mid-18th century, initially as ornamental plants, but commercial production took off in the mid-1800s following the decline of the indigo dye industry. Guatemala’s diverse microclimates and abundant volcanic soil proved ideal for coffee cultivation, quickly establishing it as a major global producer of high-quality beans. The “Blue Ayarza” designation refers to coffees from the region surrounding Laguna de Ayarza in the Santa Rosa department of Guatemala. This stunning crater lake, often called “Laguna Azul” by locals, was formed by a catastrophic volcanic eruption about 20,000 years ago. Its high altitude and cool, consistent climate provide perfect conditions for slow cherry maturation, leading to denser, sweeter beans. The area is largely remote, with smallholder farmers bringing their harvests to local mills, sometimes even by donkey, reflecting the traditional and often challenging nature of cultivation here.
